Saffron Rice with Grilled Kebab Skewers
Fragrant golden rice topped with succulent spiced meat and vegetable skewers
What You Need
Instructions
Prepare the saffron: Soak saffron threads in 3 Tbsp warm water for 10 minutes.
Make the rice: Rinse rice until water runs clear. Sauté onion in butter and olive oil until soft. Add rice, turmeric and salt, stir 2 minutes. Add chicken broth and saffron water. Bring to boil, reduce heat, cover and simmer 18 minutes. Fluff with fork.
Prepare the kofta: Mix ground meat with half the seasoning. Form into oval shapes around skewers.
Prepare the skewers: Thread chicken, shrimp and vegetables onto separate skewers. Brush with olive oil and season with remaining spices.
Grill the kebabs: Heat grill or grill pan to high heat. Grill kofta 4-5 minutes per side, chicken 5-6 minutes per side, shrimp 2-3 minutes per side until cooked through.
Assemble: Spoon saffron rice into a serving pan. Arrange grilled skewers on top. Serve immediately.
