How to get the perfect roast

Sear on the stovetop first. The flat clad base browns meat over any burner — induction included — before it goes in the oven.

Roast on the rack. The fitted rack lifts the roast so hot air circulates and the skin crisps evenly all round.

Finish with a pan gravy. Deglaze the drippings right in the pan — nothing sticks — and pour drip-free from the rolled rim.

What are the dimensions?

What temperature can it handle?
