This is the pan the internet sends you when you say you want out of Teflon. Ceramic over aluminum. Out of the box it glides. I understood the reviews. I had them too, for a minute.

Then I kept cooking. Ceramic is a glaze. A glaze is a coating. A coating is a product with a death date printed nowhere, because the date is the thing that kills the sale.

Four weeks. The center gave up. You can see aluminum where the "healthy" layer used to be. That is not wear in the cute sense. That is the pan you were trying not to own, arriving late.

A non-toxic coating that wears off is not a material. It is a countdown you feed your family through.

I wanted to catch this one. It is a good-looking pan. Light cooking, it behaves. If the job was a kitchen that photographs well, they win.

The job is not a photograph. The job is a surface you trust on a Tuesday when nobody is watching.

Two questions. Show me the test of the cooking surface. Show me what you owe me when it fails. I could not find a public report. The warranty behind it is limited.

Hope is not a material. A gorgeous pan you hope is clean is a pan you have decided not to check.

Respect where it is due. Real maker. Real body. Ceramic bonded over clad stainless, and on day one it cooks like it costs what it costs.

Turn it over in your head, not in your hand. The surface is ceramic. Premium ceramic is still a layer. The steel underneath will be here after the layer you paid for is gone.

Then the marketplace filled up with us. Same hammered face. Same "pure titanium, non-toxic" on the carton. Sometimes the same photograph, which is a special kind of lazy.

You will not catch it in a listing at 11pm. Dimples are a press. A press is cheap. Looking like the pan is the easiest part of being the pan.

Is it nonstick?

It doesn't cheat. Preheat. A little oil. Eggs let go, then the pan wipes. That is metal doing an honest job. If you want the plastic glide of a new Teflon, go buy the countdown. You already know how that ends.

Will dinner stick?
