Part 2 · What 60 seconds couldn't show you

Stainless, Cast Iron or Titanium? 22 Years in Kitchens Taught Me What a 60-Second Video Can't Show You

5 min readScored: safety, stick, and everyday upkeep

If you just watched my video, you already know the short version: skip the plastic and the forever chemicals. This is the long version, the part you only learn after a few hundred breakfasts on the same pan.

Stainless, Cast Iron or Titanium? *22 Years* in Kitchens Taught Me What a *60-Second Video* Can't Show You
Three pans people call “safe”. I scored them on what happens every day, not in a 60-second clip.

Since that video went out, I keep getting the same three questions. Is stainless really a problem if every restaurant uses it? Isn't cast iron what our grandparents cooked on? And if titanium is so good, why has nobody told me about it?

Fair questions. I asked them too. So instead of 60 seconds in a cookware aisle, let me give you the version I'd give a young cook in my kitchen: every “safe” pan, scored on the only three things that matter when you cook every single day.

1. Is it safe? Does anything move from the pan into your food? 2. Does it stick? Without a coating, and without half a bottle of oil. 3. Can you live with it? Cleanup, upkeep, and how many years it lasts.

A pan has to pass all three. Passing one isn't enough.

Stainless Steel

Stainless Steel

Passes test one, mostly. Fails test two every morning.

In the video I called stainless the most popular non-toxic option, and that's true. I cooked on it for most of my career. It's tough and it sears like a dream.

But here's what 60 seconds can't show you: what it's like at 7am with two eggs. Stainless has no release at all. Restaurants get away with it because a line cook preheats it perfectly, cooks in a pool of fat, and has a dish crew scrubbing behind him. At home, that crew is you.

Safe?Mostly. Heat and acid pull out nickel
Sticks?Yes. Lots of oil, perfect timing
UpkeepHard scrubbing after eggs and sauces

And “mostly safe” deserves a footnote. Stainless isn't one metal, it's an alloy. Simmer a tomato sauce or squeeze lemon into it, and small amounts of nickel and chromium come out with your dinner. If anyone in your family is sensitive to nickel, that matters at every meal.

Cast Iron

Cast Iron

Great on a Sunday. Exhausting on a Tuesday.

I love cast iron. I own several pieces. But I don't cook on it every day, and almost nobody who owns one does.

It's heavy enough that flipping a pancake becomes a two-handed job. Leave it wet overnight and it rusts. It needs re-seasoning to stay slick, and that “seasoning” is nothing more than layers of baked-on oil you maintain by hand. Skip a step and you're back to scraping.

Safe?Leaches iron into acidic food
Sticks?Only while the seasoning holds
UpkeepDry, oil, re-season, repeat

The iron is the part people shrug off. A little is fine. But cook a tomato sauce, a chili or anything with wine in it, and cast iron hands over far more than a little. Every time, at every meal, and it adds up in your body.

So the question from the video still stands: is there a pan that's safe, naturally non-stick and easy to live with? There is. But first a warning, because the moment people hear “titanium”, most of them go out and buy the wrong pan.
“Titanium” Coated Pans
Stainless Steel: 4/10Cast Iron: 5/10“Titanium” coated: 3/10

“Titanium” Coated Pans

Titanium on the box. Nonstick coating in the pan.

Search for a titanium pan and you'll find hundreds, some for less than a takeout dinner. Now read the fine print. “Titanium-reinforced.” “Titanium-infused.” “Titanium ceramic.” Almost all of them are an ordinary nonstick or ceramic coating with a pinch of titanium mixed into the spray.

Then there are the hybrid pans, the ones with a steel pattern on top. Look closer and the valleys between the steel are filled with nonstick coating. Same story, better marketing.

Safe? The same coating you wanted to avoid
Sticks? No, until the coating wears off
UpkeepReplace it every few years

So they score exactly like the nonstick pans from the video. A coating is a coating, no matter which metal gets sprinkled into it, and when it scratches, it ends up in your food.

One question cuts through all of it: “What does my food actually touch?” If the honest answer is a coating, walk away.

So what does my food touch at home? A solid sheet of pure titanium. Not sprayed on. Not mixed into a coating. Nothing to wear off, ever.
Solid Titanium

Solid Titanium

The only pan that passes all three tests. It asks one thing of you.

This is the Siraat Hammered Pro from the video, and here's what sets it apart from everything above. The cooking surface isn't sprayed on. It's a solid sheet of pure titanium, the same metal surgeons use for implants inside the human body, precisely because it doesn't react with anything around it.

No coating to scratch off. No alloy for heat and acid to pull metals out of. The surface your food touches is the material. It doesn't rust like cast iron, it doesn't peel like a coating, and it doesn't care about your metal spatula.

Safe?Non-reactive. Nothing leaches. Ever.
Sticks?Barely, once it's preheated
UpkeepDishwasher and metal-utensil safe

How does bare metal release an egg? Look at the surface up close. The hammered pattern is thousands of tiny dimples. Food rests on the high points with a thin film of oil underneath, so there's far less surface for it to grab. That's why the eggs in the video slid right off.

What's underneath the titanium? I'll be straight with you, because most brands won't: an aluminum core for fast, even heat, and a stainless base so it works on induction. Both are fully clad beneath the titanium. The surface you cook on is titanium.

Why not 10/10? Because it asks one thing of you. Preheat it on medium for 2 to 3 minutes, until a drop of water beads up and glides. Add a thin layer of oil, put the food in, and let it sear before you move it. For eggs, turn the heat down to low first. Skip the preheat and any pan will grab. Get it right, and cleanup is a rinse and a soft sponge.
